FSANZ offers a range of publications about the microorganisms that cause foodborne illness. Each section contains information about growth and survival characteristics of each pathogen.
You can download pdfs of these publications from the FSANZ website. On the home page, choose Learning centre under the Science and Education section at the left of the screen. Next, select Publications in the left-hand menu and then click on Agents of foodborne illness.
